Edomae sushi — literally "in front of Edo Bay" — is the original form of sushi that emerged in 19th century Tokyo. Before refrigeration, fish was cured, marinated, aged, or otherwise prepared to extend its life and develop flavour. Today, Edomae is a refined philosophy: every technique must justify itself, rice is seasoned with red vinegar, and the balance between fish and shari defines the master. Understanding Edomae Sushi
The word Edomae originally referred to fish caught in Edo Bay (Tokyo Bay). Since those fish could not be eaten raw year-round, early sushi masters developed preservation techniques: tuna was aged in soy (漬け/zuke), shrimp was cooked and vinegared, conger eel simmered in sweet broth, and flounder was salted and rested. These techniques survive today — not as necessity, but as craft perfected over centuries and now central to the finest counters in both Tokyo and Hong Kong.
