Omakase — "I leave it to you" — is the most personal dining format in Japanese cuisine. There is no menu, no choices. The chef decides everything based on the season, the morning's fish, and their reading of you as a guest. In Hong Kong, omakase ranges from intimate counters charging HKD 4,000+ to exciting mid-range experiences delivering genuine Japanese technique for under HKD 1,200.

Omakase Etiquette: The Essentials
Counter seats are timed together — late arrivals disrupt the chef's rhythm for every diner. Arrive 5 minutes early.
Brief photos are generally fine. Extended filming is poor form and interrupts the chef's focus.
Nigiri is served at optimum temperature — eat within 30 seconds. Don't let it rest.
Mention allergies and aversions at booking AND again at the counter start — not mid-meal.
Both are acceptable for nigiri. Hands let you feel the rice temperature — the traditional choice.
